MAIZE FLOUR VADA
(Appetizers of Gujarat)

Ingredients Metric
bull.gif (140 bytes) Maize flour 1/2 kg maizepakoda.jpg (5165 bytes)
bull.gif (140 bytes) Besan or suji 2 tblsps
bull.gif (140 bytes) Curd 4 tblsps
bull.gif (140 bytes) Green chilies (chopped) 6
bull.gif (140 bytes) Ginger small piece
bull.gif (140 bytes) Sugar 2 tsp.
bull.gif (140 bytes) Turmeric 1/4 tsp.
bull.gif (140 bytes) Oil for batter 2 tblsps
bull.gif (140 bytes) Fenugreek (roasted and powdered) 1 tsp.
bull.gif (140 bytes) Oil for frying
bull.gif (140 bytes) Salt to taste
Procedure
Yield : 8 People
  1. Mix well the maize flour and besan and the oil.
  2. Then add the remaining ingredients and mix again.
  3. If required add a little water.
  4. The dough should be slightly stiff.
  5. Knead well, and set aside for two to three hours.
  6. Form the dough into small round balls and press each lightly on your palm.
  7. Deep fry on a medium fire till light brown.
  8. Serve hot. (These vadas remain fresh for six days.)
