POTATO AND SAGO VADA
(Appetizers of Gujarat)

Ingredients Metric
bull.gif (140 bytes) Sago 100 gms
bull.gif (140 bytes) Potatoes 1/2 kg
bull.gif (140 bytes) Sugar 2 tsp.
bull.gif (140 bytes) Cumin seeds 1/4 tsp.
bull.gif (140 bytes) Coriander leaves (chopped) 2 tblsps
bull.gif (140 bytes) Peanuts (roasted and coarsely pounded) 2 tblsps
bull.gif (140 bytes) Green chilies (ground) 6
bull.gif (140 bytes) Ginger (ground) small piece
bull.gif (140 bytes) Juice of one lemon
bull.gif (140 bytes) Salt to taste
bull.gif (140 bytes) Oil for frying
Procedure
Yield : 6 People
  1. Soak sago in water an hour before preparation.
  2. After one hour drain it through a sieve and set aside.
  3. Boil the potatoes, peel and make into a smooth pulp with a fork.
  4. Next, add the sago, sugar, cumin, coriander, peanuts, green chilies and ginger, lemon juice and salt.
  5. Mix well.
  6. Make into small, lemon-sized balls and deep fry on a medium fire till golden brown.
  7. Serve hot with coriander chutney.
