POTATO VADA
(Fried Spicy Potato Balls)

Ingredients Metric
bull.gif (140 bytes) Potatoes 1/2 kg potatovada.jpg (4692 bytes)
bull.gif (140 bytes) Green chilies (ground) 6
bull.gif (140 bytes) Ginger (ground) small piece
bull.gif (140 bytes) Sugar 2 tsp.
bull.gif (140 bytes) Juice of one lemon
bull.gif (140 bytes) Raisins 10 to 12
bull.gif (140 bytes) Fresh coconut (grated) 2 tblsps
bull.gif (140 bytes) Coriander leaves (chopped) 2 tblsps
bull.gif (140 bytes) Gram flour (besan) 150 gms
bull.gif (140 bytes) Water 1/2 cup
bull.gif (140 bytes) Asafetida a pinch
bull.gif (140 bytes) Turmeric 1/4 tsp.
bull.gif (140 bytes) Red chili powder 1/4 tsp.
bull.gif (140 bytes) Salt to taste
bull.gif (140 bytes) Oil for frying
Procedure
Yield : 8 People
  1. Boil, peel and mash the potatoes with a fork.
  2. Make into a smooth pulp.
  3. Then add the green chilies, ginger, sugar, lemon juice, raisins, coconut and coriander leaves.
  4. Mix well. Now make firm lemon-sized balls, and set aside.
  5. In a separate vessel, mix together the besan, water, asafetida, turmeric and red chili powders and salt, and make a thin batter.
  6. Cover each potato ball with the batter, and deep fry on a medium fire till golden brown.
  7. Serve hot with coriander chutney. (The same recipe may be used for yam and raw bananas.)
