POTATO VADA

- Boil, peel and mash the potatoes with a fork.
- Make into a smooth pulp.
- Then add the green chilies, ginger, sugar, lemon juice,
raisins, coconut and coriander leaves.
- Mix well. Now make firm lemon-sized balls, and set aside.
- In a separate vessel, mix together the besan, water,
asafetida, turmeric and red chili powders and salt, and make a thin batter.
- Cover each potato ball with the batter, and deep fry on a
medium fire till golden brown.
- Serve hot with coriander chutney. (The same recipe may be
used for yam and raw bananas.)
