SUJI VADA
(Appetizers of Gujarat)

Ingredients Metric
bull.gif (140 bytes) Semolina (suji) 1 cup
bull.gif (140 bytes) Curd 2 tblsps
bull.gif (140 bytes) Fenugreek seeds (roasted and pounded) 1 tsp.
bull.gif (140 bytes) asafetida A pinch
bull.gif (140 bytes) Soda bicarbonate A pinch
bull.gif (140 bytes) Oil for batter 2 tsp.
bull.gif (140 bytes) Turmeric 1/4 tsp.
bull.gif (140 bytes) Red chili powder 1/4 tsp.
bull.gif (140 bytes) Sugar 2 tsp.
bull.gif (140 bytes) Green chilies (ground) 3
bull.gif (140 bytes) Ginger (ground) small piece
bull.gif (140 bytes) Water 1/4 cup
Procedure
Yield : 4 People
  1. Heat the oil, and pour into the suji.
  2. Next, add the remaining ingredients and mix well.
  3. The batter should be of dropping consistency.
  4. Set aside for 2-3 hours.
  5. Now, form into small round balls and deep fry on a medium fire till golden brown.
  6. Serve hot. (The same recipe may be used for plain wheat-flour vadas.)
