UPVAASI VADA
(Appetizers of Gujarat)

Ingredients Metric
bull.gif (140 bytes) potatoes 1/4 kg upvasivada.jpg (5776 bytes)
bull.gif (140 bytes) sweet potato 1/4 kg
bull.gif (140 bytes) yam 1/4 kg
bull.gif (140 bytes) green chilies (ground) 6
bull.gif (140 bytes) ginger (ground) small piece
bull.gif (140 bytes) sugar 1 tsp.
bull.gif (140 bytes) cumin seeds 1/2 tsp.
bull.gif (140 bytes) juice of half a lemon
bull.gif (140 bytes) green coconut (grated) to taste
bull.gif (140 bytes) salt to taste
bull.gif (140 bytes) coriander leaves (chopped)
bull.gif (140 bytes) oil for frying 300 gms
Procedure
Yield : 6 People
  1. Boil, peel and mash the potatoes, sweet potato and yam.
  2. Next, blend in all the ingredients (except oil) into the mash.
  3. Form into small balls and flatten.
  4. Heat the oil till smoking, and fry two or three vadas together, till golden brown.
  5. Remove and serve.
