CHUNDA
(Sweet-n-Sour Mango Chutney from Gujarat)

Description
Sweet-n-sour mango chutney from Gujarat, sweetened with sugar, spiced with chilly powder and enriched with raisins. Shelf life is 6 months if kept in sterilized bottles.
 
Ingredients Metric
bull.gif (140 bytes) Raw Mangoes 1000 gms chunda.jpg (4810 bytes)
bull.gif (140 bytes) Sugar 800 gms
bull.gif (140 bytes) Chilly Powder 50 gms
bull.gif (140 bytes) Raisins 60 gms
bull.gif (140 bytes) Salt 40 gms
Procedure
Yield : 1500 gms
  1. Peel and grate mangoes.
  2. Wash, apply salt and put aside for an hour in a big steel or glass bowl.
  3. Add sugar. Blend well.
  4. Clean raisins and keep aside.

Cooking

  1. Place a heavy bottomed kadai on fire and put mangoes in it. Cook till all the water has evaporated. Keep stirring to avoid bottom sticking.
  2. Remove from fire and add salt, chilly powder and raisins.
  3. Cool it and store in a dry sterilized glass jar.
