Sweet-n-sour
mango chutney from Gujarat, sweetened with sugar, spiced with chilly powder and enriched
with raisins. Shelf life is 6 months if kept in sterilized bottles.

Raw Mangoes
1000 gms
Sugar
800 gms
Chilly Powder
50 gms
Raisins
60 gms
Salt
40 gms
Procedure
Yield
: 1500 gms
Peel and grate mangoes.
Wash, apply salt and put aside for an hour in a big steel
or glass bowl.
Add sugar. Blend well.
Clean raisins and keep aside.
Cooking
Place a heavy bottomed kadai on fire and put mangoes in
it. Cook till all the water has evaporated. Keep stirring to avoid bottom sticking.
Remove from fire and add salt, chilly powder and raisins.
