LIMBU NU KHATTU MEETHU ATHANU
(Sweet - n - Sour Lime Pickle)
Description
A sweet-n-sour
relish of lemon slices, spiced with cumin and chilli and flavoured with vinegar and sugar.
Shelf life is 6 months if preserved properly.
Ingredients
Metric
Limes
1000 gms
Jaggery
1000 mls
Red chilli powder
20 gms
Salt
40 gms
Procedure
Yield
: 1800 gms
Wash and wipe the limes. Cut each lime into 4 pieces.
Mix them with salt and red chilli powder. Keep aside for
sometime.
Meanwhile crush jaggery
Cooking
In a stainless steel pan or in a heavy bottomed
non-sticking pan, place lime and jaggery in alternative layers.
Keep the pan on fire.
Bring it to a boiling point and simmer for 15 minutes till
jaggery is melted.
Remove from fire and cool it.
Pour in a clean glass jar. Tie a clean piece of muslin
cloth on the lip of the jar and replace the cap. Keep the jar in the sun for 3 days.
