LIMBU NU KHATTU MEETHU ATHANU
(Sweet - n - Sour Lime Pickle)

Description
A sweet-n-sour relish of lemon slices, spiced with cumin and chilli and flavoured with vinegar and sugar. Shelf life is 6 months if preserved properly.
 
Ingredients Metric

bull.gif (140 bytes) Red chilli powder 20 gms
bull.gif (140 bytes) Salt 40 gms
 
   
    
   
Procedure
Yield : 1800 gms
  1. Wash and wipe the limes. Cut each lime into 4 pieces.
  2. Mix them with salt and red chilli powder. Keep aside for sometime.
  3. Meanwhile crush jaggery

Cooking

  1. In a stainless steel pan or in a heavy bottomed non-sticking pan, place lime and jaggery in alternative layers.
  2. Keep the pan on fire.
  3. Bring it to a boiling point and simmer for 15 minutes till jaggery is melted.
  4. Remove from fire and cool it.
  5. Pour in a clean glass jar. Tie a clean piece of muslin cloth on the lip of the jar and replace the cap. Keep the jar in the sun for 3 days.
