DOODHI HALVA (White Gourd Galva)
(Sweet dish of Gujarat)
Ingredients Metric
bull.gif (140 bytes) Fresh, seedless white gourd (preferably the thin,long variety) 1 kg dhoodhihalwa.jpg (5741 bytes)
bull.gif (140 bytes) Ghee 3 tsps
bull.gif (140 bytes) Milk or Khoya 4 bottles 1/4 kg
bull.gif (140 bytes) Sugar 2 Cups
bull.gif (140 bytes) Cardamoms (powderd) 8 Pieces
bull.gif (140 bytes) Rose Essence 5 Drops
bull.gif (140 bytes) Almonds (sliced) 6 Piece
bull.gif (140 bytes) Silver Paper (optional)
Procedure
Yield : 8 People
  1. Peel and grate white gourd.
  2. Press gently to squeeze out all the water.
  3. Put it in a kadai together with the ghee, on a high flame.
  4. Stir, add milk, and keep stirring. (If khoya is used, powder it and ad it to the white gourd.)
  5. Stir till it thickens.
  6. Then add sugar and stir for another 15 minutes.
  7. Remove from fire.
  8. After 5 minutes, stir in the cardamom powder and rose essence.
  9. Rub a little ghee on a servind dish and pour in the halva.
  10. Decorate with almonds and silver paper.
