DOODH PAK
(Sweet Dish of Gujarat)

Ingredients Metric
bull.gif (140 bytes) Milk 4 bottles doodhpak.jpg (5079 bytes)
bull.gif (140 bytes) Basmati or any fine rice 4 tbsps
bull.gif (140 bytes) Sugar 11/2 cups
bull.gif (140 bytes) Cardamoms 8 pieces
bull.gif (140 bytes) Charoli 1 tsp
bull.gif (140 bytes) Almonds (blanched and sliced; optional) 6 pieces
   
Procedure
Yield : 8 People
  1. Simmer the milk in a large vessel for 10 minutes.
  2. Wash rice.
  3. Add it to the simmering milk, and keep stirring.
  4. When the rice becomes soft and the milk thickens and becomes creamy, add sugar.
  5. Stir for 10 minutes more. Remove from fire.
  6. Powder cardamoms.
  7. Pour the doodh pak into a serving bowl, and garnish with cardmoms, charoli and almonds.
  8. Serve hot or cold.
