GHAU-NA PHADA-NI LAPSI
(Sweet Dish of Gujarat)

Ingredients Metric
bull.gif (140 bytes) Oats (daliya) 1 cup
bull.gif (140 bytes) Ghee 6 tblsps
bull.gif (140 bytes) Raisins 15
bull.gif (140 bytes) Sugar 3/4 cup
bull.gif (140 bytes) Cardamoms (powdered) 6 pieces
bull.gif (140 bytes) Chironji, Almonds and Khus-Khus (optional)
Procedure
Yield : 4 People
  1. Roast daliya in a kadai with the ghee, till light brown.
  2. Add raisins.
  3. In another vessel heat 3 cups wate and add to the browned daliya.
  4. Reduce heat, and keep stirring.
  5. The water will be absorbed within 10 to 15 minutes, and the daliya will soften.
  6. Add sugar and stir.
  7. Cover and keep on low heat.
  8. When the ghee starts to separate, remove from fire.
  9. Garnish with cardamom powder, chironji, almonds and khus-khus.
  10. Serve hot or cold. (This dish is usually made on auspicious occasions in Gujarat.)
