PURAN POLI
(Stuffed Sweet Roti)

Ingredients Metric
bull.gif (140 bytes) Arhar dal 2 cups puranpoli.jpg (4329 bytes)
bull.gif (140 bytes) Sugar 2 cups
bull.gif (140 bytes) Cardamoms (powdered) 12
bull.gif (140 bytes) Ghee 3 tblsps
bull.gif (140 bytes) fine wheat flour 2 cups
bull.gif (140 bytes) Ghee 1 cup
Procedure
Yield : 6 People
  1. Wash and cook the dal in a pressure cooker till soft.
  2. Add sugar. Put this mixture into a kadai or heavy pan, and keep stirring till it dries; this is the puran.
  3. Remove from fire.
  4. Stir in cardamom powder while still hot.
  5. Add 3 tablespoons ghee to wheat flour and knead the dough as you would for chapatis.
  6. Knead well, till it is very soft.
  7. Make into small lemon-sized balls and divide the puran into similar balls, as well.
  8. Each ball of dough should again be divided in two.
  9. Make two small puris and stuff the ball of puran between them, pressing the edges together gently.
  10. Flatten like a chapati.
  11. Heat tava and, on medium heat, bake both sides.
  12. Remove and apply ghee generously on both sides.
  13. Serve hot.
